Egg yolk allergy is usually more prominent in adults, although it can affect individuals of all ages. Individuals that are allergic to egg yolks can usually safely consume egg whites without difficulty. When it comes to eggs, egg whites' proteins are more likely to cause an allergic reaction than the yolk proteins.
Items containing eggs should be avoided if an individual has an allergy to egg yolk viz. processed meat, mayonnaise, marshmallows, salad dressing, baked goods, pasta, cakes, cream-based foods, custard, doughnuts, waffles, ice cream, pudding etc. Additionally, an individual that is not allergic to egg whites should not eat them because of the possibility of cross-contamination between the two sections of the egg.
Like every allergy, an egg yolk allergy causes a reaction in the immune system. When contact is made with the allergen, the body views it as toxic and becomes sensitized, producing IgE antibodies against these contaminants. These antibodies trigger the release of histamines, which will cause the symptoms of an allergic reaction.

Specific IgE measures the concentration of circulating allergen specific IgE for food allergen egg yolk.
This test requires a blood sample. A tourniquet (elastic) band is placed tightly on the upper arm. The patient is then asked to make a fist. This helps in the build-up of blood filling the veins. The skin is disinfected before needle insertion and the blood sample is collected in vacutainer.

Detection of IgE antibodies indicates an increased likelihood of allergy to egg yolk that may be responsible for eliciting signs and symptoms. A negative result indicates that the symptoms are not due to egg yolk allergies and other differential diagnoses must be considered.
